Potato Salad with Green Pea Mayonnaise

Another multi-purpose recipe that’s great to do in large batches and spread across meals – the green pea mayonnaise is a tasty sauce for fish or chicken.


1 kg jersey benny potatoes
1 cup frozen peas
1/2 cup sour cream
1/2 cup mayonnaise
2 garlic cloves crushed
2 tbs mint chopped
2 tbs chives chopped

  1. Cook potatoes until just tender. Drain, rinse and refrigerate until cold.
  2. Cook peas, drain and allow to cool.
  3. Puree peas with remainder of ingredients until smooth. Spoon over potatoes. Chill until needed or serve immediately.
