Another multi-purpose recipe that’s great to do in large batches and spread across meals – the green pea mayonnaise is a tasty sauce for fish or chicken.
1 kg jersey benny potatoes
1 cup frozen peas
1/2 cup sour cream
1/2 cup mayonnaise
2 garlic cloves crushed
2 tbs mint chopped
2 tbs chives chopped
- Cook potatoes until just tender. Drain, rinse and refrigerate until cold.
- Cook peas, drain and allow to cool.
- Puree peas with remainder of ingredients until smooth. Spoon over potatoes. Chill until needed or serve immediately.
